The best recipes are always the ones where you know exactly what goes into them and don’t need to add anything artificial.

This strawberry protein mousse is a great example of how you can create a creamy, light, and refreshing dessert using only natural ingredients — perfectly suited for a healthy lifestyle. This style of protein mousse has been on my table for quite some time now, mainly because store-bought protein products have become rather expensive, and their taste and ingredient lists are not something I personally want to consume on a regular basis.

Choosing Quality Ingredients for Protein Mousse

The base of this recipe is low-fat curd cheese, which I found at Lidl.

  • it is an especially great choice because it contains around 17 g of protein per 100 grams,
  • has a very low fat content,
  • comes with a simple and clean ingredient list,
  • and contains no artificial additives.

In addition, I use low-fat Greek yogurt, which gives the mousse a creamy texture and a light tanginess,
as well as homemade strawberry jam made from frozen strawberries, lime juice, and a small amount of sweetener.

I personally use stevia, as it is a natural and calorie-free sweetener.

This is a perfect example of how great flavor does not need to come from artificial ingredients.
All you need are high-quality ingredients and the right flavor combinations.

Strawberry Protein Mousse – Healthy, Quick, and Easy!

Koostisosad

  • 400 g frozen strawberries (you can use either frozen or fresh ones)
  • 20 g freshly squeezed lime juice
  • 55 g stevia (if needed, you can substitute it with honey or agave syrup, but this will increase the calorie and carbohydrate content)
  • 10 g (potato)starch mixed with 50 ml of water
  • 10 g gelatin
  • 2 ts vanilla extract
  • 300 g low-fat (0.2%) Greek yogurt (for example Actifeel)
  • 275 g low-fat (0.4%) quark

Strawberry jam

  • Add the frozen strawberries to a saucepan and add the lime juice, sweetener (stevia), and optionally a little vanilla. Stir and heat over medium heat.
  • Let the mixture gently simmer until the strawberries are soft and start to break down.
  • If you like, mash or chop the strawberries so you can later divide the jam in half — adding one part into the mousse and folding the other part in at the end to get small strawberry pieces inside the mousse as well.
  • Mix the starch with cold water in a separate bowl and pour it into the jam.
  • Heat the mixture while stirring constantly until it thickens. Remove the saucepan from the heat and stir in the pre-soaked gelatin.
  • Let the jam cool slightly (do not place it in the fridge, as the gelatin would make it set too firmly when chilled).

Protein mousse

  • Add the low-fat quark, Greek yogurt, and the cooled strawberry jam to a blender.
  • Blend on high speed until the mixture is smooth and airy.
  • If desired, blend a little longer to achieve an extra light and fluffy texture.

Serving

  • Divide the protein mousse into serving glasses or dessert bowls.
  • Cover the mousses with a lid or cling film.
  • Place in the refrigerator and let set for at least 4 hours.
  • Serve chilled and enjoy the fresh and creamy strawberry protein mousse.
